You can cut it in half and make a quart or double it to make a gallon. Note: a gallon fits into a 6qt Instant Pot, which is what we make for our family of 6 that lasts us a few days to a week.

Save Money Making this Homemade Instant Pot Yogurt Recipe

Making yogurt at home using your Instant Pot is not only convenient but also cost-effective. Store-bought yogurt can quickly add up, especially if you prefer premium or specialty varieties. Plus, you’ll have the satisfaction of knowing precisely what’s in your yogurt – pure, wholesome goodness with no additives or preservatives.

I often say – you can make a gallon of a yogurt for the cost of a gallon of milk!

The other great feature of this yogurt process is that you only need your Instant Pot, a thermometer, and a silicone spatula/large stirring spoon. The silicone lid is optional, but we often store ours in the fridge in the Instant Pot insert with the silicone lid.

4 Easy Steps: Instant Pot Yogurt Recipe

Step 1: Warm the Milk

Start by pouring a half gallon of milk into the inner pot of your Instant Pot. Whether you prefer whole milk for a richer texture or opt for low-fat or non-dairy alternatives, the choice is yours. We love using our raw goat milk or our local farmer’s raw a2a2 cow’s milk. We’ve done this process with raw and pasteurized, homogenized and not homogenized, and it’s always worked great!

Heat your milk on the sauté function until it reaches 180°F (82°C). Be careful not to scorch your milk. I tend to babysit this stage pretty closely and keep stirring. It’s a lot of milk to have to throw to the chickens if I scorch it. Keep your thermometer handy.

Step 2: Cool the Milk

After heating the milk, remove the inner pot from the Instant Pot and let it cool down to around 110°F (43°C). I like to do this in an ice bath. Sit your Instant Pot insert in a bowl of water and ice. For precise temperature monitoring, use a food thermometer. This cooling process is essential as it creates the perfect environment for the live cultures to flourish and transform the milk into thick and tangy yogurt.

Step 3: Add the Starter

Once the milk has reached the desired temperature, gently whisk in 1/2 cup of yogurt starter or plain yogurt with live active cultures. *Remember: if you are doing a gallon of yogurt, use a cup of starter. The starter can be store-bought or a small amount of yogurt from your previous batch. The live cultures act as the “good bacteria” responsible for fermenting the milk and turning it into delicious yogurt.

Another reminder: you can use freeze dried yogurt that you’ve saved as starter, store-bought yogurt with active live cultures, or a cup from a previous batch that you’ve made. I know the “starter culture” can sound super scary when you start, but it’s so simple!

Step 4: Incubate the Yogurt

Place the inner pot back into your Instant Pot, cover it with the lid, and select the “Yogurt” function. The time will likely come up and say 8 or 10 hours. I allow the yogurt to ferment for 10 hours and let it develop its characteristic tangy flavor. The longer the incubation period, the thicker and more flavorful your yogurt will become.

Transforming regular yogurt into rich and creamy Greek yogurt is a simple process that adds a delightful twist to your yogurt-making adventure. Straining yogurt removes excess whey, resulting in a thicker and more luxurious consistency that is characteristic of Greek yogurt. Follow these easy steps to strain your yogurt and enjoy a delectable Greek yogurt right in your homestead kitchen.

Once your yogurt has fermented and set to your desired tanginess, it’s time to begin the straining process. 

Place a large flour sack towel or even a thin clean dish towel over a colander that’s in a deep bowl. Pour the freshly made yogurt onto the flour sack towel, allowing the excess whey to drip down into the bowl. 

Cover the yogurt with the edges of the cloth, creating a loose bundle. Transfer the entire setup to the refrigerator and let it strain for at least 4 hours, or overnight for an even thicker consistency. The longer you strain, the denser and creamier your Greek yogurt will become. I’ve let mine strain on the counter for just an hour or so, also. This part is totally up to you and your comfort level. 

You can also just pour the yogurt into the towel, tie with a string, hang from a cabinet, and let the whey drip into a bowl. Again, your preference! 

Once the straining is complete, carefully unwrap the flour sack towel and transfer the thickened yogurt into a clean container. The strained whey collected in the bowl can be saved for various uses, such as adding to smoothies or as a liquid for baking. We love to use whey to make mashed potatoes. You can also feed your garden with the whey. 

With your freshly strained Greek yogurt, the culinary possibilities are endless. Enjoy it on its own, topped with fresh fruits and honey, or incorporate it into your favorite recipes to add a luscious creaminess.
