How to Make Chocolate Zucchini Muffins with Freeze Dried Powders

Our Chocolate Zucchini Muffins are not only scrumptiously rich but also feature a secret ingredient – freeze dried zucchini powder. Plus, we’ll share how to make these muffins even during those egg-shortage moments using your freeze dried eggs!

Recipe

Ingredients:

– 1 1/4 cups flour

– 1/3 cup cocoa powder

– 1 tsp baking soda

– 1/4 tsp salt

– 2 tablespoons coconut oil

– 1/3 cup honey

– 1 egg (or 2 tablespoons egg powder + 2 tablespoons water)

– 1 cup reconstituted zucchini powder (aim for thick applesauce consistency)

– 1/2 cup milk

– 1/2 cup dark chocolate chunks or chips

Directions:

1. Preheat your oven to 350°F (175°C). Prepare your muffin tin with silicone liners, paper liners, or grease it well.

2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In another bowl (you can use a hand mixer or your stand mixer bowl), combine the coconut oil, honey, and egg (or egg powder + water). Mix until well combined.

4. Add the reconstituted zucchini powder and milk to the wet mixture. Mix again until everything is well incorporated.

5. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

6. Gently fold in the dark chocolate chunks or chips. The pieces don’t have to be tiny since they’ll melt deliciously.

7. Divide the batter evenly into 12 muffin cups.

8. Bake in the preheated oven for about 25 minutes, or until a knife comes out clean when inserted into a muffin.

Our secret ingredient, zucchini powder, is a space-saving and convenient way to use up zucchini without worrying about moisture content. We freeze-dried 3 1/2 gallon jars of zucchini powder, which takes up significantly less space than storing shredded zucchini in the freezer. You can substitute the zucchini powder for the flour, but this recipe is for submitting the shredded zucchini for zucchini powder.
